François Cotat is a legendary Sancerre grower in the hamlet of Chavignol, making tiny quantities of old-vine, barrel-fermented Sauvignon Blanc that ages like fine white Burgundy and bears little resemblance to modern, crisp Sancerre. Caillottes is his cuvée from the limestone-pebble soils that give it its name. 2014 was a very good Loire vintage for Sauvignon Blanc.
