Salvioni La Cerbaiola was founded in 1985 by Giulio and Mirella Salvioni after a sample of their handmade wine from just 1.5 hectares impressed fellow producers enough to encourage commercial production; now led by David Salvioni, the estate farms 4 hectares of Sangiovese Grosso across three vineyard plots at 420 to 430 metres above sea level on galestro and stony marl soils southeast of Montalcino. Total production is limited to 10,000 to 15,000 bottles per year, with the entire harvest devoted to Brunello in years of insufficient quality for the Rosso. Fermentation in steel is followed by long maceration and ageing in large Slavonian oak casks without fining or filtration. The 2019 Rosso is from a vintage of good freshness and balance in Montalcino. Eric Guido from Vinous gave it a rating of 93+.

“The darkly alluring 2019 Rosso di Montalcino captivates, as crushed ashen stone and balsam herbs give way to plum sauce and a hint of sweet mint. Its textures are like velvet yet lifted, with a tactile mix of sour cherries and ripe strawberries over a salty core of stimulating acids and minerals. The 2019 finishes structured, impossibly long and spicy, leaving a staining of primary concentration under an air of purple-toned inner florals. This is just an infant today with the potential for greatness.
