75% Chardonnay, 25% Alvarinho
This wine was made by Tholakele under the mentorship of Pieter Ferreira whilst she was at Graham Beck Wines during her second year as a Protégé.
The grapes were handpicked and whole-bunch pressed. The Alvarinho underwent primary fermentation in a Nomblot egg, while the Chardonnay was vinified in Clayver, Foudre, and 225 litre barrels. I blended the base wines, bottled them unfiltered for secondary fermentation, and matured them on lees for 12 months before disgorging without dosage.
Vibrant and lively, this Cap Classique shows citrus and green apple aromas with layers of white peach, pineapple, and delicate white flowers. Notes of mint and eucalyptus add a cool herbal complexity, while fine bubbles and crisp acidity provide an elegant, energetic palate.
This wine is my Tribute Passion Project — a heartfelt expression of deep passion, opportunity, and the transformative power of mentorship. Named in honour of my first mentor, a devoted primary school teacher who nurtured my early potential, it celebrates all mentors who ignite excellence within us. As you savour each sip, may it stir your soul and remind you of the profound, lasting impact of guidance. It is a symbol of gratitude and renewal — paying tribute to the village that nurtures every dreamer.
