Hand-harvested in January 2017 at 19 degrees balling, the grapes underwent whole bunch pressing with a low recovery rate to ensure the extraction of desirable flavours and prevent bitter tannins. Fermentation occurred in a stainless steel tank at 15 degrees Celsius, with a small portion undergoing barrel fermentation for added complexity. The wine went through secondary fermentation in the bottle and spent 61 months ageing on the lees before manual riddling and disgorging.
Limited production of 520 magnums showcases its exclusivity. The wine displays a vibrant green/yellow hue with fine bubbles. Fresh aromas of golden delicious apple, acacia blossom, minerality, and baked brioche emerge on the nose. The palate offers a well-balanced structure, gentle bubbles, and a lingering finish. Overall, the Green Man wine is a meticulously crafted Chardonnay that emphasizes the preservation of natural flavours and a harmonious balance of aromas and textures.
