Following ten acclaimed vintages of Big Dog, Silverthorn presents its first Brut Nature - ‘Mad as the Mist and Snow’- with less than 3g/l residual sugar. The Chardonnay, from a 34-year-old block planted in 1991, is 100% barrel fermented and aged to develop depth and complexity. Set on ancient shale and limestone soils dating back 400 million years, this wine expresses the unique terroir of Robertson.

Tasting Notes: An enticing bouquet of citrus peel, white fruit, and roasted almonds. The palate is elegantly dry, featuring a fine mousse and a lingering, nutty finish.
