Schilfwein, or reed wine, is made from grapes that are dried on mats of reeds or straw, concentrating their sugars and flavors before fermentation. This method is similar to the Italian "Passito" style. This technique results in a wine with intense sweetness, rich flavors, and a luscious mouthfeel. The drying process enhances the natural sugars in the grapes, producing a dessert wine of exceptional quality.
